Photographer's Note
I recently saw some culinary specialties on this site, and it seems right to make known the typical Bergamo specialty. I am talking about the "casoncelli", a stuffed pasta typical of eastern Lombardy, but there are numerous local variations which, although slightly different from each other, maintain some basic characteristics: the common filling is made up of meat, Grana Padano and aromatic herbs, while the pasta takes the form of a half moon. The filling gives the Casoncelli a slightly sweet taste, a typical feature of the medieval and Renaissance culinary scene in which they originate; certain documentation certifies their existence as early as 1386. Under Venetian rule the filling was enriched with spices, macaroons and ingredients of distant origin. The current recipe is the consolidation of the nineteenth-century version. They are boiled in boiling water and stir-fried with butter and sage. Enjoy your meal.
Ho visto recentemente alcune specialita' culinarie su questo sito, e mi sembra giusto far conoscere la tipica specialità bergamasca. Parlo dei "casoncelli", una pasta ripiena tipica della Lombardia orientale, ma sono presenti numerosissime varianti locali che pur essendo leggermente diverse tra loro mantengono alcune caratteristiche di base: la farcia comune è costituita da carne, grana padano ed erbe aromatiche, mentre la pasta assume la forma di una mezza luna. Il ripieno conferisce ai Casoncelli un sapore lievemente dolciastro, caratteristica tipica del panorama culinario medioevale e rinascimentale nel quale hanno origine; una documentazione certa attesta la loro esistenza già nel 1386. Sotto il dominio veneziano il ripieno si arricchí con spezie, amaretti e ingredienti di origine lontana. La ricetta attuale è il consolidamento della versione ottocentesca. Vengono lessati in acqua bollente e saltati in padella con burro e salvia. Buon appetito.

Lepa testenina, dobro pokazana sa lepim bojama, kontrastom i perspektivom.

Have you eaten all this?? It looks like Polish pierogi but I do not know what is this white on top? looks like castor sugar but it isn't. I will find the receipt on Youtube and try preparing it. Nice photo.

The thumbnail was a bit mysterious, so i was nicely surprised to open the photo to find these delicacies. Even without having tasted them I can tell for sure I like this better than your last photo. ;-)
Obviously I missed a great experience by not visiting Bergamo. This is a nice and original photo and very appetizing.

You can imagine I was interested in your photograph!
I cannot help but think that this reminds me of a herd of sheep, closely packed, with fluffy, white wool on their heads.
I am not suggesting that your pasta tastes like lamb, just that it creates a pretty, visual similarity.

I guess you refer also to the specialty which I have shared. To be honest I prefer the dumplings than the meal which I presented :)
However I usually prefer filling not to contain meat, somehow I don't really trust what exactly is being put inside of them. There was a case in the UK few years ago that the Beef Lasagna in stores contained Horse meat instead or sometimes they were not even able to detect any meat at all.
This looks appetizing though,

I think I would like to eat this dish. In Italian cuisine, I've never eaten anything I didn't like.
I suppose it is a dish that is eaten warm.

Had to go to a Wikipedia pagr to find out about this Casoncelli.
Its a typical Lombardia dish, but has a very similar dish in the Eastern-European jewish traditional didhes. So, before even tasting this - I already like this food...

I didn't know about this pasta specialty, but there are so many... It seems very original, but its preparation seems to take time.
Colour, sharpness and luminosity are effectively managed.

I was reading about curry being an all purpose generic descriptor for the many dozens or perhaps even hundreds of distinct local cuisines in India. It is about as useful as saying something is Italian pasta, and as you know, there are hundreds of varieties of pasta too. Some are more delicious than others. I like mild to medium curries but not the overpowering, really hot ones, that dull the senses and kill all the other subtle flavours. Good close up of the Casoncelli. I tried 3 varieties of pasta in Bologna alone! Tfs!

I AM so chuffed to see those ... even I can't taste and touch them :-)
I know for sure ... it'll blow me away if I can get hold of these, these, these ... did you mention 'casoncelli' !!!
I could eat all of these 'bite-size' dumplings ( to me, how I see it )
You know what, it's also reminder me of... since it's Chinese New Year tomorrow , a 'Sycee Gold Ingot' ... to serve them on this special day, I reckon I'll make a lot of my Chinese friends very happy :-)
Or shall I use this photo as CNY card too !
