They call it rice paper or rice sheets. These are made and dried out in the sun. The rice paper is then used to wrap some fresh ingredients to make the Vietnamese Spring rolls, also known as 'summer' rolls. But first, the rice paper will have to be softened by either dipping it qucikly in hot water, or by using a damp towel.
Small wooden houses like these where ladies were making the rice paper were found along the way to one of the temples just outside of Battambang.
